I am loving only cooking for 5 or 10 minutes and having a meal that fits my easy healthy gluten free life. Once you get the process of these gluten free recipes down you can start to change up the ingredients and create your own set of 5 minute meals.
This one is great for any meal of the day. This one I created for lunch and served it with a gluten free wrap of green leafy vegetables and sliced meats.
Ingredients:
1 organic cucumber
1/4 of a small red onion
1/4 of organic yellow bell pepper
1-2 dozen tiny organic Flamme Orange tomatoes
equal amonts of Organic Extra Virgin Olive Oil and
White Balsamic Vinegar
Course Celtic Salt to taste
1/2 tsp Greek Seasonings
Instructions:
Grab that julienne peeler and use it on the cucumber, red onion, and bell pepper.
Add in the tomatoes and dressing ingredients and stir.
That’s all there is to it.
Note: If you don’t have the same vinegar or oil or any ingredient that I used, change it up for what you have on hand.

This recipe fits my philosophy of making quick meals with natural ingredients. I'm thinking of using zucchini in place of the cucumber. Should be tasty!
