Simply…Gluten-Free Quick Meals Review and Contest

Carol Kiniski has outdone herself this time for sure.  Her new cookbook, Simply . . . Gluten-free Quick Meals: More Than 100 Great-Tasting Recipes for Good Food Fast is brilliant.  The book is laid out by meal menus within the chapters so you don’t have to keep flipping through the book to make a meal.  There are chapters on Quick Mixes, Simple Suppers, Easy Entertaining, Get Up and Go, Pantry Raid, Slow Cooker and Quick-Cooking Strategies and ideas on stocking your pantry.  There are so many choices and of course you can mix and match.  The recipes are noted if they are Dairy-Free or Dairy-Free Adaptable and the same for Vegetarian and Vegan options.

Just last night we had her Almond-Crusted Chicken Piccata minus the parmesan for this dairy free gal.  The recipes range from Enchilada Lasagna to a Steakhouse Filet Mignon.  And of course there are desserts mixed in there like Mini Almond Orange Cakes which are delicious and a Blueberry Fool which will have you eating dessert in a snap of your fingers.

    I already subscribe to both the newsletter and the recipes. I am new to eating dairy and gluten free, started in February. I feel better and have more energy eating this way, but struggle with finding recipes that I can trust will work out well. I have tried local gf breads and they crumble in my hands. Having a cookbook that I know I can trust and gaining new items to add to my available meals would be great! Thanks for having this opportunity!

    I think I am already subscribed to both. My 5 yo son was diagnosed with wheat, dairy, and egg allergies 2 weeks ago. I had already been making a major effort to get away from the processed foods in our diet and had finally built up a decent collection of recipes that my son and DH would eat. Unfortunately my son can no longer eat most of those. Now I feel like I am back at square one. I have been trying to prepare foods that fit into his new diet but he won’t eat many of them. I desperately need a really good allergen-free cookbook! Winning the cookbook would be wonderful! I am so thankful your site is here. I visit it almost everday!

    I have subscribed to your newsletter for a while now and have really found it helpful. I realized about a year ago that I had issues with gluten and dairy after doing an elimination diet. Doctor's are really good at telling you what NOT to do but not so helpful when it comes to learning a whole new vocabulary and cooking skill set when you need to change something HUGE in your life!     I think I'm on your newsletter and recipe lists. Quick GF meals would be great for our family. With two working parents it is a challenge to try and prepare good meals and eat them in the short time between when we get home and when we need to start the kid's bed time routines. We need all the efficiency we can get.

    I already subscribe. My 16 year old daughter is gluten and lactose intolerant. We homeschool, so sometimes I am trying to throw a meal together at the last minute – sometimes later than I would like!     I was diagnosed n Feb 2012 with Celiac Disease and my family would love me to have a wonderful cookbook so I can learn to cook good things that we can all eat and enjoy as a family. Now I am left out alot since I am new to this I tend to make them supper then grill myself some chicken or fish and just eat veggies. This book would be a GREAT kick start to my new lifestyle.
