My top 3 healthiest foods I love to eat or recommend: Sweet potatoes (do you see a theme here?), green smoothies, chickpeas

Childhood ambition: to be a soap opera star

My favorite cookbook: Beyond The Moon Cookbook by Ginny Callan – My sister requests the butternut squash chili all the time!

Wildest dream: To live on a farm, own my own nutritional counseling business, have some sort of bakery/cafe on the side, and perhaps run gluten-free healthy mind and body retreats on the weekend. And you can add a husband and kids in there too. And a horse and perhaps a goat and some chickens too!

Favorite activity: Cooking with a good friend

Favorite thing to cook: Soup – You can always come up with a delicious soup no matter how bare your pantry is

Favorite kitchen tool: My Cutco knife

Biggest risk I’ve taken: Moving to Seattle and leaving my life in New York

Favorite exercise: Kundalini yoga

What I do to treat myself: Go to a health food store and buy all organic produce

What I do to feel at peace: Kundalini yoga

Biggest challenge: Getting over my shyness and fear of public speaking

Favorite vacation spot: Scotland

Craziest thing I’ve ever done: Doing the naked quad run in college (and yes, that was an actual thing, not just me running by myself!)

Health concerns I’ve cleared up: Depression (by eating gluten-free), IBS symptoms, headaches (still working on this one)

Books I’ve written: None..yet?

I started my blog to: Satisfy a need for creativity at a time when I felt there was no space for it in my life

What I hope the people that visit my blog find: Someone who understands the struggles they have/have had with food

What I love about what I do: I get to share my thoughts in the way that I express myself best…through writing.

    You're right, Diane … Iris is a totally beautiful person! It's been such a delight to get to know her since I found her blog a while back. She always amazes and inspires! 🙂 I sooo look forward to meeting her one day. Might have to make another trip to the Seattle area. 😉 I loved reading her interview, but especially her wildest dream, craziness, and vacation fave (I bet she was looking for Jamie Frazer in Scotland LOL … our shared love).

      I can't wait to meet you both! I'm going to have to make one of these conferences soon… And strangely, when I went to Scotland, I had never even heard of Jamie Fraser. One of my classmates was reading the books and recommended them…but I came home with a teddy bear named after him. 🙂

        Come to the Dallas Expo in October, so we can meet too! I loved learning more about you. You ARE a beautiful person. And we share a love for sweet potatoes – they are one of my favs and something my body really loves.

      My sister sold CutCo knives for about a month before she realized she hated being in sales. But it was long enough for her to convince me that they're worth the money!

    How gorgeous person Iris is, I hope I can meet up with you soon. You really rock! I love reading your site though and its all complete my cravings. We have the same favorite exercise and its yoga.
