Extraordinary Folks in Food- Elana Amsterdam

I’m really excited to share a new weekly series on Extraordinary Folks in Food.  These are people I know or have read and think that they make great contributions to the food world.  I’ve sent a list of questions to each and they have chosen which ones to answer.  I’ve shared their answers below so you can get to know them a little better.

This week I’d like to share with you Elana Amsterdam who writes the food blog Elana’s Pantry.  She has also written two cookbooks, The Gluten-Free Almond Flour Cookbook and Gluten-Free Cupcakes: 50 Irresistible Recipes Made with Almond and Coconut Flour due out in April of this year.  We love the recipes in her first book and can’t wait for the second.

    I love Elana's recipes. I started baking with almond flour back in December and have been a fan ever since. I totally share Elana's love for almonds and kale 🙂

      Valerie I'm with you on loving baking with almond flour. I love Elana's recipes because they are short and easy to follow. I'm not good at following directions but I don't seem to have any problems with hers!

    I love Elana! Thanks for sharing her with us so we could get to know her better, Diane! I think we all would have been shocked if she'd said her favorite healthy and snack foods were anything other than almonds. LOL The almond industry owes her a huge, huge debt of gratitude for getting us all on board the almond "train." 😉

      Shirley you are so right. I used to snack on them once in awhile but I didn't cook and bake with them like I do now. I can't believe what I was missing. What's your favorite Elana recipe?

    Hmmm? I thought I commented on this. I read every word when you published this post, but I was just snooping around (procrastinating) and catching up on things over here at The W.H.O.L.E. Gang and saw that my thoughts weren't telepathically published into the comment box. This is called "doing too many things at once." Maybe my comment had so many grammatical errors in it that you were saving me from embarrassment by not approving it. If so, thank you. Otherwise, I'll rethink it, type it out and actually push "submit comment" this time.

    I bought Elana's cookbook when it first came out and love the idea of using almond flour. She has great recipes and they're healthy, which I love. Great combo. Good taste and good health!
