This week’s secret ingredient for Friday Foodie Fix is lentils. Lentils are something relatively new to me. My oldest son cooks them all the time and loves them. They are one of his go to vegetarian meals. There are three main varieties of lentils, French or European lentils, Egyptian or red lentil and yellow lentil.
The French lentil is usually sold with the seed coat on and has a grayish-brown exterior. This is the most commonly found lentil in the US.
The Egyptian lentil is smaller and rounder with no seed coat. This along with the yellow lentil can be found in some stores and most often in Middle Eastern or East Indian markets.
Store your lentils in an air tight container for up to a year. These little legumes are packed with calcium, phosphorus, iron and vitamins A and B.
