West African Chicken Peanut Stew

What do you have cooking this week?  Still soccer season here so we’re keeping it simple.  Salads with lots of good greens, veggies tossed in wherever I can and lean organic protein.  That’s a good recipe for any week.  If you are a fan of honey and you missed Friday Foodie Fix-Honey then you missed almost 40 recipes using honey.  Make sure you take a peek before you leave.

This week’s Secret Ingredient for Friday Foodie Fix is tomatillos.  Head to the grocery story or farmers market and pick some up.  They are very tasty and versatile.

MondaySpaghetti and Meatballs with Spinach Salad

TuesdayUnstuffed Cabbage Roll Stew – Beef, Pork, Tomatoes, Onions, Cabbage

Wednesday–  Pork Chops with apples, sauteed kale and quinoa

Thursday– Chicken with Onions, Tomatillos and Jalapeno Peppers cooked in the crockpot

FridaySpinach and Artichoke Dip Pizza

Saturday-leftovers

    I do love pizza. I've not made it in some time laying low on grains. I'm going to experiment with crusts. Some day I'll have to be patient enough to work on a grain free crust with a recipe.

    Lexie I will say that African Chicken Peanut Stew is a favorite. Sometimes just seeing something inspires a new meal. Let me know what you create this week.
