
West African Chicken Peanut Stew
What do you have cooking this week? Still soccer season here so we’re keeping it simple. Salads with lots of good greens, veggies tossed in wherever I can and lean organic protein. This week’s Secret Ingredient for Friday Foodie Fix is tomatillos. Head to the grocery story or farmers market and pick some up. They are very tasty and versatile.
Monday– Spaghetti and Meatballs with Spinach Salad
Tuesday– Unstuffed Cabbage Roll Stew – Beef, Pork, Tomatoes, Onions, Cabbage
Wednesday– Pork Chops with apples, sauteed kale and quinoa
Thursday– Chicken with Onions, Tomatillos and Jalapeno Peppers cooked in the crockpot
Friday– Spinach and Artichoke Dip Pizza

Sunday– West African Chicken and Peanut Stew

I do love pizza. I've not made it in some time laying low on grains. I'm going to experiment with crusts. Some day I'll have to be patient enough to work on a grain free crust with a recipe.
