
Friday Foodie Fix
Today’s Secret Ingredient for Friday Foodie Fix is Summer Squash. Such a versatile vegetable that comes in so many shapes, sizes and colors. I usually go for the typical yellow. I love to grill it and serve it as a side dish, use it in Individual Lasagna or even add it to soup. Now days you can purchase squash anytime during the year, but there is nothing like farm fresh squash!

My favorite way to use summer squash is definitely the grill! I like the "standard" zucchini and crookneck yellow squash the best. Slice them about 1/4 inch thick slices, lengthwise rather than rounds. Then I marinate them in lemon juice, olive oil, fresh dill and S&P. Right onto the grill from there. We do all vegetarian grilling, so I like each vegetable to have a different flavor–this is my hands-down fave for summer squash.
A few years ago I also stuffed zuch's with white beans & sausage-type spices… I'll have to try to dig that recipe up, as it was a big hit.
Stephanie- They do taste great stuffed with the beans. I do that for my vegetarian son and I love the idea of the sausage for me too. I had leftover grilled squash and they went into my frittata last night, Yum! Like your marinade too!
