Menu Plan Monday- February 15, 2010

Aphrodisia, Wild Rose, Cupuacu Truffles by Gnosis Chocolate

Happy Presidents’ Day!  I hope you had a wonderful Valentine’s Day yesterday and had the opportunity to do something nice for someone else.  I spent the weekend cooking for my two guys here and  I hope to be sending my college guy something in the mail.  Wish he was here.  My dessert treat was two fold over the weekend.  First I had chocolate truffles from Gnosis Chocolate.  They are raw,vegan, organic, handmade, gluten free, soy free, no refined sugar and low GI.  I really liked the Cupuacu chocolate with a cream filling and would buy a huge box of those.  Then I created an amazing whipped cream from chilled coconut milk cream (good stuff from the top of the can) and powdered sugar to top off fresh berries.  It was divine.

But yesterday was more than just Valentine’s Day, it was my mothers birthday.  Her 80th!  She looks amazing and no one would ever guess her age.  She’s an amazing cook, has the biggest heart and is the best mom ever.  I got really lucky that she decided to make me part of her family.  Thanks Mom!

Before the blizzards hit we traveled to visit my mom and met up with my niece, her husband and 1 year old daughter.  We got to spend some of the day together but when the snow started we had to leave.  I hope we can do that again real soon.  Isn’t this a cool photo!

This week you only get a couple of days to recover from Valentine’s Day and it’s time for Mardi Gras Fat Tuesday!  Oh the foods that go along with that holiday.  It’s a tough choice for me, chocolate or spicy gumbo with andoullie sausage.  hmmm

Well enough chat, on to the menu for the week.

Monday – Pulled pork tacos, salad

Tuesday – Shrimp Creole, red beans and rice, King Cake(some version of Jules Shepard)

Wednesday – Soy Citris Salmon, rice, haricot verts

Thursday – Skirt steak, black bean, sweet potato, red onion hash

Friday – Chipotle Shrimp

Saturday – Roasted vegetable pizza

Sunday – Buffalo and pork chorizo hash

    Those truffles look amazing, and their credentials are even better. Raw?! Vegan?! Great truffles without cream and heat?! Kudos to Gnosis.

    Also, your menu looks really tasty.

    Truffles are hard to resist. Those look awesome. I love to make my own, but they are so irresistible, I don't do that often … usually every other year for our V Day Party. I also make sure to sample some at The Chocolate Fetish when I visit Asheville, NC. Heavenly.

    I'm intrigued by the coconut cream whipped cream. I certainly know about the coconut cream at the top of a chilled can, but it's not much. I guess it doesn't take much to mix with the powdered sugar?

      Shirley- There are so few things I eat that someone else made that these were a double treat for me. Great company too. As for the whipped cream it was amazing and I made so much we're still eating it. I didn't cover it and it's lasting in the frig. I will have to share this recipe next week for our Gluten Free Progressive OSCAR Dinner Party!
