Menu Plan Monday – December 21

I’m sharing my menu plan for this week but one never knows at this point.  Yesterday we had 20 inches of snow where I live and I think we may be digging out for some time.  Hopefully I have all of the ingredients on hand.  This menu is a good one for those long cold days.

The other exciting news this weekend was being able to give two people the wonderful news that they won Elana Amsterdam’s Gluten Free Almond Flour Cookbook.

Just a reminder that this week there will be no Friday Foodie Fix.  We will pick it back up next year on Friday January 1st with your favorite New Year’s Day Celebration Foods or Meals (can include best hangover cures).  I know a lot of families have traditions for the first meal of the new year.  I hope you’ll share yours.

Monday – Roasted Pork Loin with  baked apples

Tuesday Whole Roasted Spatchcock Chicken, roasted root vegetables

Wednesday – Ostrich Steaks, green beans, quinoa

Thursday – Veal Shoulder Roast

Friday Mushroom Risotto

Saturday – Winter Fire Roasted Tomato Soup and sandwiches

Sunday – Italian Calzones

    Great menu! I love risotto, so I am going to give that recipe a try! 🙂

      Kim- Risotto is a great dish to make when it's cold outside. I usually keep it vegetarian for my son, but I have made it with seafood and boy was that good. Enjoy!

    I'm so glad that my husband isn't working on Christmas Eve and Christmas. He really needs the days off.

    What a great variety! Do you ever have leftovers?? I try to have them every other night. It makes my life so much easier. 🙂

      Amy- Actually lots of things on my menu are just that, leftovers. I freeze my leftovers right after dinner. This way I get to have them, just not the next day. We try to eat on a 4 day rotation. If you see something on my menu you saw last month or even a couple of months ago, it's probably being pulled from the freezer. It makes it really great when there are days when I don't want to cook. I just go to the freezer and pull out a TV dinner that I made! We LOVE leftovers!
