This week’s Secret Ingredient for Friday Foodie Fix is Onions!  As you can tell by looking at my Ingredients listing, onions is the largest word which means it’s in a lot of my recipes.  It’s a go to ingredient which I go to way too much.  There are so many great onions.  I love the spring onions, leeks, green onions, shallots, red onions, Spanish onions, sweet onions, white onions and more.  There are over 300 varieties of onions but most are sold by types instead of names.  I just listed a combination of both names and types.

onions When buying an onion it should feel firm and should smell mild unpeeled.  Store them in a cool, dry and well-ventilated place that is also dark.   Also, don’t store them near potatoes.  Potatoes give off gas and moisture and will make onions spoil more rapidly.  Oh, now you get the problem in your refrigerator drawer.

    Wow I use onions all the time, but just realized I hardly ever let them be the feature of any dish – they are always in the background. The apple onion mash I created this week is one of the few dishes I've ever made that specifically highlighted an onion's flavor (the other probably being French onion soup). One quick question – is garlic also in the onion family?

      Jenn- Great question! Garlic and onions are both part of the Allium or lily family. You're very smart. I had to double check in my Produce Bible. Love your recipe with apples and onions. I really want to give that a try. Love the herbs you've added too. Thanks for sharing!

    I have to agree with Jenn … usually onions are a key ingredient, but not the primary one. The popover pizza version I made last had onions as a main topping. Is it cheating if I include it again since I originally submitted it for its mushroom topping? Hope not. Onions are also key to my quiche recipes, which I submitted before when the secret ingredient was eggs. 🙂

    We're going camping again this weekend and I'm going to bake Vidalia onions in the coals using a fairly new recipe. I've tried two variations at home, but I'm still tweaking the concept. If I get a winner, I'll do a post and link back. 😉

      Shirley- I'm still on vacation and I'm liking it so much I don't want to come back so I've really been AWOL!!! I almost forgot to post FFF today. Don't worry about the blog name. If I can remember how I'll go in and add it. I usually take onions for granted and use them in so many dishes. I love them with cucumbers and tomatoes and just about anything I cook. I however have been eating them so much they showed up on my new ALCAT as something I should cut back on. Darn. I do love my Onion Rings too. I'm trying to cut back on them for now but love to see how everyone uses them. I often get into the whole loop of, "I rely on this ingredient or that and so does everyone else." Trying to expand my world.

      Have fun camping. Looking forward to hearing how the onions turn out. Sorry I didnt' join in the Happy Camper carnival. Vacation has cut into lots of those things. I need to jump on my favorite blogs and get reading again. I think it's time for me to also do a FFF recap to see what was shared this summer. I think that will be my Labor Day posting!
