I am hoping that this week there are more people that cook with Zucchini than last week’s Secret Ingredient of Swiss Chard. Friday Foodie Fix was a little light last week. If you find that over the summer you are brave and give it a try or you already cook with it but just didn’t have a recipe ready, go back and add in your recipe. When selecting a zucchini, look for it to be firm and have a shiny skin. The skin is delicate and can be scraped with your finger nail so don’t worry if you see scratches. Zucchini is very easy to prepare and can be used in so many recipes. They can be used for steaming, stir-frying, barbecuing, sauteing, baking and braising. Early in the season you can also find zucchini blossoms at the market which taste great fried.

mmmm I have been using zucchini in everything lately, it's one of my favorite summer vegetables!!

I don't believe I missed this…and no zucchini recipes ready to go. We eat zucchini all of the time in everything. I even eat it raw. 🙂 I love looking through the recipes, though.

Chocolate zucchini is a great recipe that I got from Sophie-Safe Cooking. I recently found out my 9 month old son is allergic to milk, eggs, peanuts and wheat and I have been eating "safe" because I am nursing, plus I am trying to figure this allergy thing out. It's a good recipe and and a good recipe book.
