This weeks Friday Foodie Fix Secret Ingredient is Swiss Chard. In spite of it’s name it originated in the Mediterranean. A Swiss botanist named it and that’s how “Swiss” became it’s common name. I really like the rainbow chard which has the alternating red, yellow and white stalks with green leaves. Swiss chard is rich in folate, vitamins A, K and C, magnesium, potassium, iron and fiber. To be noted, it also contains oxalates, natural substances which if consumed in excess can concentrate in one’s bodily fluids giving the kidney and gallbladder problems. I wonder, is this really a problem, over eating your greens. Not in this house. I’m trying to hide them just to get people to eat them. But just in case in your house you just can’t stop eating Swiss chard.
I’ve not cooked much with Swiss Chard and I’m really looking forward to the recipes you share. Here are two of my recipes, please feel free to share as many of yours as you like. For all the rules to Friday Foodie Fix, please visit the dedicated page at the top of this blog.
Macadamia Nut Crusted Tilapia with Vegetables and Quinoa

Next week’s Secret Ingredient is ……………………………Zucchini!
I know that Swiss chard is soooo healthy, but I have yet to find an incredible way to eat it… The closest I have come to enjoying it is frying up some bacon bits and adding chard, salt, & pepper to the mix until soft. Your soup idea sounds great though!
Erica- I hope you give the soup a try. You'll be surprised how great this soup tastes and the swiss chard does not dominate the taste.
I've never cooked with Swiss chard and I have to admit it's not something I have any desire to eat. I can't recall if I ever tried it or not. I know that's terrible, but I'm sure my family wouldn't go for it either. I am looking forward to zucchini next week, especially since I'm getting some from my garden now. It's one of our favorites!
Linda- I probably would not have picked up swiss chard to cook but it came in my weekly bag from my CSA. I'm really glad it did. I loved the soup. I hope you'll give it a try and let me know what you think.

Darn, didn't get it together to post something with chard. I love this vegetable! We have some growing in our garden. I like to saute it in olive oil with summer squash. Just a little salt and pepper is all that is needed. Serve over quinoa. That is my version of a super simple lunch. 🙂
Ali- Feel free to add in recipes anytime. I think people are scared off of swiss chard. The way you cook it sounds good too. I'll have to give it a try.

I haven't cooked with swiss chard at all that I can recall but thought I'd drop by to see what everyone had to share. I didn't make it until today because I was busy moving to my own domain. 🙂
