Friday Foodie Fix

Summer editions of Friday Foodie Fix seem to be lighter than when school’s in and everyone is working.  Summer vacations and different schedules I’m sure play a part.   If you miss a week and want to catch up or create something you want to share with everyone but it was a past Secret Ingredient, please feel free to add it in anytime.  I will do a mid summer recap and then an end of the summer recap.  All of the Friday Foodie Fix posts are also available anytime through the navigation bar along with the rules.  I also encourage you to add more than one recipe to any week’s post.

This week’s Secret Ingredient for Friday Foodie Fix is Cucumbers.  After visiting the grocery store a person would think there was only one variety of cucumbers and they all grow to the same uniform size and are waxy.  But there are many varieties and sizes and nice organic cucumbers with no waxy finish.

Round and oval shapes, yellow, pale green and bronze colors and various sizes ranging from 1 inch to the mammoth English types.

Cucumbers contain silica which is very good for the skin and ascorbic and caffeic acids which is helpful in preventing fluid retention.  Cucumbers are often used for salads, dips and drinks.  For a refreshing drink add a few slices of cucumber to your pitcher of water.

    I love cucumbers, so cool and refreshing, they make any dish seem light and perfect for summer 🙂

      Jenn- I agree! I love the fact they reduce fluid retention too. Nice benefit.

      Shirley- I often use the excuse of summer to get out of making a whole meal and just picking out of the refrigerator. Now I have lots of veggies to munch on too. Looking forward to easy fun off the cuff recipes. Have a great summer!

    Ok, no cucumbers to share this week but I still had to drop in and see what everyone is doing. 🙂 We love cucumbers…I like to juice them. Great on a hot, summer day.
