June is a busy month if you have kids. End of the school year activities, plans for the summer and lots of holidays. For me that means dinners need to be quick and easy and I need to be flexible if the menu needs to change.
Keep in mind the Secret Ingredient for Friday Foodie Fix this week is Blueberries. Don’t forget to check out last week’s list of great mushroom recipes. If you want to check out the complete list of Friday Foodie Fix posts, you can click on the navigation tab at the top of this blog anytime.
I hope you have a good week and keep smiling!
Monday – Chicken Chow Mein with rice and quinoa
Tuesday – Mahi Mahi with mango, pineapple, papaya
Wednesday – Beans
Thursday – Ostrich Steaks with grilled vegetables
Friday – Mediterranean Tuna with Artichokes
Saturday – Beef Burgers and corn on the cob
Sunday – Scallops

I hope to be able to enter something this week by Friday – blueberries huh? Love them! Sounds like you have a delish week planned!
Carol- It would be GREAT to have you join in. The more the merrier. I find people will follow recipe links more than just a blog link. I look forward to yours.
Diane,
You sure are one organized lady! I'll be stopping by for dinner on Thursday night as I've never experienced ostrich steaks. Hmmm? I also have to get myself up-to-date so I can participate in some of this fun stuff you all do — Foodie Friday, etc.

Melissa- Too bad my house doesn't look as organized as my menu. I keep blaming the dog for leaving things all over the house. I'd love to have you over on Thursday. Ostrich meat is a great alternative to beef. Tastes like beef but much better for your body. I'd love to have you join in on Friday Foodie Fix this week with blueberries. I bet you have some good recipes!
I'll be over for the Mahi tomorrow night. We had Ginger-Glazed Mahi with an impromptu pico de gallo that was awesome last week. I want some more Mahi … I love mango on Mahi.
