So much to share, so little time. I’ll try not to write all of my posts on the same day so I can spread out the news. It was a really amazing week last week. So many new and exciting things to do and eat in the gluten free world. This week promises no less. Tuesday is Cinco de Mayo and Scott’s parents are coming for the weekend and Mother’s Day. To top it of, my oldest finishes up his college finals and will be home and can start helping with the vegetarian cooking. I’ll have to add that to my menu later. Great week for sure! Monday– Mediterranean Tuna Pasta
Tuesday– Fish Tacos, Chicken Taquitos, refried beans, My Strawberry Margaritas
Wednesday– Ostrich Steaks with herbed red potatoes
Thursday– Pork BBQ with coleslaw and beans
Friday– Shrimp and Polenta
Saturday– Filets and mushroom risotto
Sunday– Indian turkey legs with lentils

Ostrich steaks?!? You throw it in there like it's as normal as having baked chicken. I'd like to hear more about it.
Not sure if I'll get around to an artichoke recipe. I've never eaten artichoke!!
This week I'm celebrating my oldest son's 18th birthday!
Linda- Congrats on your son turning 18. It's a great day. There are so many foods I've never eaten so I'm hoping that the Friday Foodie Fix will stretch me to eat more good food, especially vegetables. I think it's easier to start with frozen or canned artichokes than fresh. Ostrich tastes like steak but it's very lean and good for you. If you can find some, give it a try. First time I had it was in burger form in LaJolla, CA. I love it!
