Mini Tomatillo Chicken Burgers

These are my favorite “fun dish” I’ve made this month.  They tasted so good.  This meal would be great for company or any day of the week.  I made mine on a Monday night!

Ingredients:

1 pound ground chicken breast
1 pound ground chicken thigh
½ orange pepper, finely diced
¼ -½ red onion, finely diced
¼ -½ white onion, finely diced
½ Anaheim pepper, finely diced
Handful fresh cilantro chopped
3 TB creamy tomatillo salsa
Sea salt & pepper to taste
Virgin coconut oil
Extra virgin olive oil
1 TB tapioca flour

Directions:

Mix all ingredients together.  Spoon mixture into pan preheated medium high.  I used a medium scoop, approximately 2 TB to make them mini burgers.  Cook until brown on the bottom and the sides start to cook.  Turn over, cook until firm to the touch and cooked all the way through.

I served these with mini black bean cakes and topped with tomato salsa and tomatillo salsa.  You can also add some tortilla chips for more crunch and texture.  If you make these take a photo and send it to me.  I’d love to see your creations.  Don’t forget to check out What’s For Dinner Wednesday!

    Linda- I love using ground meats. They are usually faster and cost less. Any meal you make with a full cut you can mix up and make into a burger. It's a fun way to have great meals fast! Thanks for the comment.

    Alisa- Burgers are so versatile. My favorite usually turn out to be a dish I make and transformed into a burger, like chicken cordon blue. Makes a great burger for a lot less money and time involved. What are your favorite burgers?

    Jessie- Thank you. Glad the family likes it. Don't let the kids ride bikes when you're making these. They won't do well sitting for 4 hours. I do love Mexican cooking. I'm working on perfecting my pupusas. They'll be up after I try your taquitos!
