Menu Plan Monday –April 6

I am really looking forward to this week.  I’ll be meeting new people, launching great new things, learning many new ideas and getting to spend time with my family and friends.  What could be better?  I hope you are looking forward to your week too.

Tip for the week- if your menu includes many items that reside in your freezer, mark your calendar when it should be moved to the refrigerator, so it can thaw to be cooked.

Monday–  Turkey-roni with gluten free breadsticks
Tuesday–  Ostrich Burgers and fries
Wednesday–  Mahi Mahi- pineapple rice, sugar snap peas
Thursday–  Vegetable stir fry- whatever is hiding in my refrigerator!
Friday–  B&B Chili with cornbread
Saturday–  Andouille Sausage and Potato Hash
Sunday–  Whole Fish stuffed with citrus and herbs, almond quinoa green beans

    Sounds like a great plan, Diane. I just made a new Mahi Mahi recipe myself that turned out very well.
    This week will be a quiet one for me, which I'm actually looking forward to after several busy ones. 🙂 My husband is working long hours the next few weeks, so I'll have time to come home and decompress, and leisurely cook dinner, check blogs, etc. I cooked a ton over the weekend so I think I'll actually slack off a bit on that part for a change. LOL

    Christy- I'm always looking for new ideas too. Feel free to share yours with us. My son has some favorite go to foods. How about your son? Being a Gluten Free Food Coach is a lot of fun. I like helping people who are trying to figure out how to live and not just survive a gluten free life. I also enjoy helping people who just found out they need to eliminate gluten and help things not be so overwhelming. Thanks for your comments!
