Gluten Free Frito Fish

I’m sure this sounds even crazier than Frito Chicken Nuggets.  Well it may be but my 15 year old ate it all and asked for more.  He’s not a fan of “real” food so eating fish that is not in long rectangles is something he really doesn’t like to do.  I was making the Macadamia Nut Crusted Tilapia coated in my macadamia nut breading, and he gave me that look.  You know the one.  The one that says no way in this lifetime am I eating that for dinner tonight.  As I was breading the fish he asked if I could make his with Fritos instead.  We’ll I thought if it worked for chicken maybe it will work for fish.  I followed the 3 step process of a starchy gluten free flour, the coconut water and agave mixture and then the pulverized Fritos.  Tossed it in the pan with the coconut oil and fried it up on medium high.

This is the result and he was very happy.  So happy he added potato chips to accompany it just to keep the colors matching.

Don’t be afraid to mix things together that you know are safe for your family to eat (allergy free) and things that are good for you that you might not eat otherwise.  I’m thinking of trying this on some vegetables for my husband.  He’s not big on those.

Life can be hard trying to cook gluten free all the time so have fun with your food!

    Frito fish! I like it. I have used tortilla crumbs (bought in a can) on chicken. I bet it would work well on fish too.
