This is the easiest and quickest way to make crunchy gluten free chicken nuggets. My 15 year old son requests these frequently.
Organic Chicken breasts- as many as you want to cook
1 cup Tapioca Flour
Celtic Sea Salt to taste
Pepper to taste
3-6 Tablespoons Virgin Coconut Oil
1 – 2 cups Safflower Oil
Put oils into deep fry pan giving at least 1/4 inch of oil and heat on medium high
Mix together flour, salt and pepper
Cut chicken into bite size pieces
Toss chicken into flour and gently into the pan of hot oil.
Cook until golden brown and turn over until other side is the same color. Remove with slotted utensil.
