Quinoa Muffins

This recipe is adapted from the box of Quinoa Flakes by Ancient Harvest:

½ Cup     Quinoa flour
½ cup     Quinoa flakes
2TB     Agave
2 tsp     Baking Powder
1 tsp     Baking Soda
½ tsp    Salt
2-3    very ripe bananas
2    eggs or egg replacer
1 cup    organic raisins
1 cup     walnuts (can leave these out)

Preheat oven to 400 degrees and line muffin pan with organic paper cups.
Mix all dry ingredients in one bowl and wet ingredients in another except for the raisins and walnuts.  Combine the two bowls completely.  Then stir in the raisins and walnuts.  Only fill tins half full.  Bake 15-25 minutes depending on the size if your muffin  pan.
