Don’t miss out on this old time favorite. Salad Niçoise definitley has a list of ingredients needed in order to call it such, but you know me. I do like to play with my food and I’m not very good with rules. As a matter of fact I’m not sure I’ve made this salad the same way twice nor have I seen two recipes the same. I totally change up the way an ingredient is prepared or add in some new ones. The great thing about this salad is everything is a whole food making it a gluten free recipe and keeping with our easy, healthy, gluten free life.

Here are two examples of recent versions.

I’ll give you the main ingredients and then you can play with them. Let me know what you like to add or take away from your Salad Niçoise.

Traditional Ingredients:

mixed greens, to cover plate

4 new potatoes, boiled or roasted

1 shallot, minced

small handful parsley, chopped

tuna, canned or fresh cooked

1 cup green beans, steamed, broiled or sautéed

1/4 cup nicoise or kalamata olives

1 hard boiled egg, quartered or sliced

tomatoes, 7 cherry or 1 regular cut into quarters

2 anchovy filets

1 teaspoon capers

I added in toasted pine nuts and carrot tops along with the red carrots chopped but didn’t have any anchovies, capers or olives on hand.

Vinaigrette Dressing Ingredients:

1 teaspoon dijon mustard

1/4 cup olive oil

1 lemon, juiced

1 garlic clove, minced or mashed into a paste

pinch of salt and pepper

This recipe will make one serving.

Instructions:

Place your salad greens on the plate first. From here everyone has their own ideas. I don’t use a pattern or place certain ingredients in the center and the others on the outer rim. But you can come up with whatever pattern you like.

If you are using the anchovies lay them on top of the eggs.

As for the dressing you can toss the potatoes, shallots, green beans and capers with the dressing and then place that in the center of the plate. I usually just pour the dressing over the entire salad once it’s on my plate. Remember that word easy that I like.

For the dressing it can’t get any easier than this. Put all of the ingredients into a small glass jar, (something you’ve saved from salsa or pickles) put the lid on and shake. Give it a taste. You may want to add in some vinegar. I like to use champagne or white balsamic vinegar. You might need to adjust the salt and pepper too. Taste it before you put it on your salad.

Note: to keep this a vegetarian version remove the tuna and anchovies.

Ingredients:

4 organic quick fry pork chops

1 tablespoon Ancho Chili powder

2 teaspoons Adobo

2 teaspoons organic coconut oil

1 cup pineapple chunks, fresh cut or canned in its own juices please

1 cup of your favorite beans, red, pinto or black are best

Directions:

Heat a a non-stick or iron skillet on medium high with oil.

Sprinkle seasonings (reserve 1/3 for pineapple) onto pork chops and place into pan. Cook until starting to brown, approximately 5-9 minutes.

Turn chops over and cook another 2-4 minutes or until brown. Don’t over cook these chops. With them being thin they should cook up fast so don’t leave the pan.

Place chops on a plate and cover with foil. Toss the pineapple into the pan and sprinkle with remaining seasonings. Heat on medium high to high until warmed through, approximately 2-4 minutes.

To serve place chop on plate with pineapple and a serving of beans.

Note: To make this Paleo, swap out the beans for sweet potatoes.

I’m talking of course of the latest meatball craze. Meatballs are so hot there are meatball only restaurants and cookbooks. They have recipes for Goat Balls and Bunny Balls. Don’t think I’m trying either of those.

We’ve been eating a variety of meatballs around here for some time. I love to make them because there are fast, easy and you can put just about anything into them. They make great every day food, party food, special occasion food, can be served alone, with a side dish, in a soup or in a sandwich and are easy to make as a gluten free recipe.

I’ve made Meatballs with a Heart, Chicken Meatballs, Simply Dressed Meatballs, North African Meatballs, and the traditional Spaghetti and Meatballs. With the price of meats increasing I’m sure I will be making more balls from assorted foods. What’s the most interesting ones you’ve made or eaten?

Just in case you don’t like the name of this recipe, feel free to use this one as it sounds more formal: boulettes de poulet et de porc au pesto and didn’t get any giggles.

For more ideas on my different pesto recipes see Pesto Shrimp on Polenta Portobellos, Pesto Chicken Salad and Pesto Shrimp and Tomato for a spicy version.

Ingredients:
1 pound ground organic chicken breast
1 pound ground organic pork
2 TB pesto (basil, garlic, pine nuts, olive oil, salt, pepper)

Directions:
Mix all ingredients and form into large meatballs or small if you prefer. Bake in a 425 degree pre-heated oven for 15-25 minutes or until cooked through. I like to use a jelly roll pan covered in aluminum foil. This keeps any extra juices from spilling over and it makes for fast easy clean up.

Serve with your favorite side dish. I chose Sun dried Tomato Polenta and Paleo Zucchini and Squash Pesto Pasta (recipe on Wednesday).

Healthy Facts

Spinach is a power house of nutrients. It is packed with Vitamin K, essential for blood clotting and bone health, and has been shown to help reduce inflammation. Not to mention spinach provides a good source of calcium and iron, beta carotene and potassium. If you are looking to increase your Vitamin B6 and C as well as folate and magnesium this is a great option. Keep in mind that your B6 and C vitamins are water soulable and cannot be stored in your body so you need to replenished daily and any excess would be simply flushed out. Vitamin B6 helps maintain healthy brain function, normal nerve function, forming red blood cells, and breaking down and digesting proteins.

How to Buy

I love to pick up spinach at the farmers markets and buy from a local source. With spinach the fresher the better as far as holding on to nutrients. Look for bright green leaves without any slimy leaves or dark spots. Spinach is also something you should buy organic. It’s very high up on the Dirty Dozen list from the EWG which means it’s exposure and absorption of pesticides is high. But I’d rather you eat conventionally grown produce is better than eating none at all.

How to Store

When you get home with your fresh spinach give it a nice cold bath, literally. Fill a clean sink or bowl with cold water and toss in your spinach. Give it a good spin around and then let it sit for a little bit so any grit can sink to the bottom of the bowl. Take out the spinach and repeat until no grit is at the bottom of your bowl. Once done wrap the leaves in a paper towel and put into a plastic bag to store in your refrigerator. Now it’s ready when you want to nibble, cook or make that morning green juice or smoothie.

Favorite Tip

If you want your leaves crisp let them stay in the refrigerator after washing for an hour or two. I love to add spinach to my juicer or smoothie but it’s great sauteed in scrambled eggs, stuffed inside a chicken breast and cut into ribbons or chiffanod and put on your pizza.

In fact it was so good I only had time to grab my iPhone to get a picture before it was devoured. This dish was so fast and easy to make and tasted so amazing that I will be making it many more times for sure. Maybe the next time I make it I’ll steal some off to my photo table to get more shots.

Let me share just a little about the ingredients before I share the recipe. Endive might be one of those items you passed over in the grocery store because you were not sure what to do with it. Let me assure you there are many ways to enjoy endive but more importantly I’m going to give you the reasons why you should give them a try.

Endive are of course low in calories, fat, sodium and cholesterol free. They are loaded with vitamins and minerals our bodies need such as

vitamins B and C, calcium, magnesium, iron, zinc, folate and selenium. Plus they are a good source of both beta-carotene and potassium. If you are looking to have more fiber in your diet and you don’t eat whole grains then endive is a great option since it’s high in complex fibers. It also aids in digestion including helping to remove toxins from your digestive track. Are you sold yet?

I love to put them into a pan and sauté or keep them raw and fill them with amazing morsels of shrimp and crab or maybe something as simple as egg salad. They are really very versatile. Don’t forget if you are a smoothie or juice goddess like me, toss them into your morning smoothie and get all of those health benefits in your drink.

Mushrooms, especially the Shiitake mushrooms used here are also filled with great health benefits. Mushrooms are a great source of your B vitamins and minerals such as selenium, copper and potassium. Mushrooms have been shown to help protect against some cancers and are full of antioxidant power. But here are my two favorite benefits of mushrooms. They are one of only a few sources of Vitamin D in real food, not added or fortified. Plus mushrooms, especially shiitake, oyster and split gill mushrooms contain beta-glucans that have been shown to stimulate immunity in our bodies helping us resist allergies and help in the process to metabolize fats and sugars in our bodies.

So now you see why your body will be doing the happy dance with both endive and mushrooms helping your body stay healthy. Now this recipe does include pancetta which you can add more or less or even take out completely to keep this a vegetarian and vegan recipe. Serve this recipe for your best dinner party or your Tuesday night family dinner. Either way, get these great ingredients on to your plate and into your body.

Sautéed Endive, Mushroom and Crisp Pancetta With Wine

Ingredients:

2 heads of Endive sliced into strips

8-12 shiitake mushrooms, stems removed and sliced

4 slices of pancetta diced

1 clove garlic minced

2/3 -1 cup white wine (only wine you would drink and you like the taste)

Celtic Sea Salt and fresh cracked pepper to taste

Instructions:

First thing you’ll want to do is dice your pancetta and get it started in your pan on medium high. You’ll want this to release the oils and crisp.

While this is cooking work on your endive. Cut off the bottom and separate the leaves. If they were small I only sliced them once but if they were bigger I sliced them twice but all lengthwise so you have strips.

Once you see it has started to crisp add in the garlic and mushroom. Once that has started to combine add in the endive. Don’t let the endive stick but if the pancetta does don’t worry we’ll get it off when we deglaze the pan.

Remove all of that to your serving dish but again don’t worry if some of your pancetta is stuck to the pan. Add in your wine and deglaze your pan by scrapping those little bits of amazing flavor off and into the wine. Simmer for just a few minutes until it reduces. I like to see it cover the bottom of the pan but not by very much.

Add the endive, mushrooms and pancetta back into the pan and coat with that amazing sauce you just made. Give it a taste and see if you want to add in any salt and pepper. Remember you can always add more and you may want to let those eating add their own.

Put it all back into the serving dish and you are ready to eat dinner. This recipe will serve 2-4 people depending on how many times they go back for more.

I served this with Almond chicken which is so easy to make I don’t even consider it a recipe so I’ll give you a bonus here. Pound your boneless skinless chicken breast, coat with almond flour (Honeyville) and cook up in a little oil in a frying pan. See I told you it was too easy.

If you grew up near Philadelphia chances are you have either eaten or heard of scrapple. It has been a favorite of mine since childhood. Early on in my gluten-free life I decided I would need to recreate this favorite food that was safe for me to eat. So using the traditional ingredients minus the wheat flour I shared my Scrapple with you and have been making it ever since.

Lately our house has made more of a shift to a Paleo/Primal diet. We’ve cut out all grains which meant the cornmeal in my scrapple had to be changed. The flour I use most often in the house is almond flour. I’m very thankful for Elana Amsterdam and her blog Elana’s Pantry and her book The Gluten-Free Almond Flour Cookbook that introduced me to almond flour cooking and baking.

So out of curiosity I thought I would change up my recipe and swap out almond flour for cornmeal and add in another ingredient that also has a great deal of nutritional benefits. The result was better than I had hoped for. We actually like this new scrapple a lot better than my original. It just goes to show you that you must try new things even when you are unsure of the results, especially in the kitchen.

Serve this up for breakfast, lunch or dinner with a bit of fruit and vegetables or you can always drink your fruit and vegetables.

Now a note on bacon. There is bacon in this recipe and I want to be very clear on what I consider to be the proper type of bacon to keep this recipe Paleo/Primal. You can buy uncured bacon from pastured pork without nitrates. Pay attention to the salt content too.

Scrapple Paleo and Primal Style

Ingredients:

3-5 pound organic bone in pork butt or shoulder (same thing)

1 package organic bacon (nitrate free)

1 package organic chicken livers

2 bay leaves

4 sage leaves or 1 tsp dried sage

4 sprigs of thyme or 1 tsp dried thyme

1 cup filtered water

Instructions:

Place all ingredients into the crockpot and set on low for 12-20 hours. I know that may seem like a long gap and the reason is if it cooks longer it won’t be a problem but you want to get in at least 12 hours. If you are an overnight cooker like me I put this on after dinner and take it out after breakfast the next day.

Creating the Scrapple loaves

Ingredients:

Crockpot ingredients keeping liquid separate and removing the bone

1 1/2 – 2 cups almond flour (Honeyville is best and I don’t think Bob’s Red Mill will work)

2 tsp sage

2 tsp thyme

2 tsp savory

1 tsp white pepper

1 tsp black pepper

1/2 tsp cayenne pepper

Celtic Sea Salt to taste

Directions:

Place all of the meats and spices into a food processor and grind until smooth.

Put this into a large heavy pot, add in the almond flour and gradually add in the liquid. Let this combine and start to thicken up.

Take out a tablespoon and fry it up to see if you like the seasonings. You can adjust if you want more salt, sage or peppers. Add in more seasonings if you need and test again. Remember you can always add in more but once there it can’t be removed.

Once you have the taste you want line your loaf containers with plastic wrap so removal of the scrapple will be easier. Spoon the mixture into each container. Give them a tap on the countertop to help get rid of air bubbles. Cover the top with plastic wrap.

Place into the refrigerator to set up. This will take a good 10 hours. You can leave it for the next day.

When you are ready to eat slice up a loaf and place it into a cold frying pan. Turn the heat on medium high and brown on each side. Now you can serve with some scrambled eggs, fruit and vegetables. There are many folks that like ketchup with their scrapple but I was never one.

Notes:

If you are out of sage, thyme and savory I have substituted some poultry seasonings once but you really do need more sage in the mix.

I like to sprinkle salt on the top of mine after it is cooked as I usually don’t add in more to the mixture besides what is in the bacon.

I keep the extra loaves in the freezer and take out as needed.
