This week’s secret ingredient is Swiss Chard.
Swiss Chard is related to spinach and beets which makes total sense. This gem is packed with antioxidants in the carotenoids form such as beta-carotene, lutein and zeaxanthin which helps maintain eye health and may reduce the risk of cataracts. When our bodies convert he beta-carotene to vitamin A it boosts immunity. Eating one cup of cooked swiss chard gives you more than a third of your daily recommended amount of vitamin C. Don’t forget the vitamins B6,W, K, potassium, magnesium and calcium plus all the fiber packed into this beautiful vegetable.
Look for a crisp vibrant green leaf with no small holes or yellow or brown marks. Of course if you’re eating it from my garden someone may have had a little nibble first since my garden is organic. We’re happy to share since we always eat more.
How to Store
Rince off the leaves in cold water but don’t drown them. Put into a plastic bag with paper towels but don’t seal the bag as it needs to breathe. Best if used in just a few days.
If you’ve tasted Swiss Chard and thought it had a strong flavor you most likely ate the Ruby Red or Rhubarb chard that has thin red stalks. If you want a more mild tasting chard look for the Rainbow chard that is often sold together with red, pink, yellow or white stalks or the Fordhook Giant variety which has the crinkly leaves and thick, white, tender stalks.
