What could be better on a cold winter morning but hanging out with your family eating a nice warm breakfast that was fast and easy to make?  Maybe if you’re getting presents that day too!  Here is something that can help with the warm fast and easy breakfast.  The rest is up to you.

This is one of those recipes I have a hard time calling a recipe.  To me it’s more like a method.  It is easily made gluten free, dairy free, soy free and even vegetarian all in one muffin tin.  Having said that my math minded son figured out with all of the possibilities I’ve shared here, you could make 392 different versions and I didn’t even give you all the possible choices!

Easy Egg Cups with 392 Possibilities

First decide what you want as the base layer.  You can use thin slices of ham, turkey, prosciutto,cooked slices of bacon,  cooked sausage, cooked chorizo, smoked salmon, small corn tortilla, hash browns, flattened slice of gluten-free bread, spinach, kale, tomatoes, empty baked potato skin or anything else you can come up with to include.

Next you need an egg for each cup.

Then you can add in some cheese if you like even if it’s Daiya dairy, gluten and soy free.  If you eat dairy try parmesan, marscarpone, manchego, cheddar, mozzarella, provolone, or even cream cheese.

If your base layer is more on the neutral side like a tortilla, bread, potato and the like, you probably want to add in some spices.  Think about the flavors you enjoy.  Do you want Italian spices, Mexican, French or maybe even Spanish.  Just keep in mind these are small cups and dried herbs are more intense in flavor than fresh.

Now that you have layered your favorites into the greased muffin tins or ramekins, place into a 375 degree pre-heated oven and cook for approximately 20 minutes or until the whites are cooked.  Mine took 22 minutes.

When they are done use a straight spatula to losen around the edges and place onto a plate to serve immediately.  Garnish your plate with a little fruit and you have a great meal that looks amazing and really all you did was layer a few items into a muffin tin.

Below will be Ham and Cheese or Tortilla Chili Egg Cups but please do not be limited by this.  Use some of the possibilities mentioned above and have fun!

One idea to engage the troops is to place the items out on the counter and let people put what they want into their pre-greased cup or muffin tin.  Put it into the oven while you open presents on Christmas morning and when you’re done breakfast will be served.  Keep in mind this is not just an idea for Christmas morning but for any morning, afternoon or evening.
