Menu Plan Monday- October 25, 2010

From what I hear there are lots of folks like me with some stupid cold or something hanging around that we just can’t shake.  It has definitely slowed me down but I’m not letting it stop me.  This could be the last week of soccer season so that means 4-5 games this week or one every night.  So my plan was to cook some of my menu over the weekend.  This way as the week rolls on I’ll have food ready and others will only take a few minutes to fix.  I also am making big pots of Chili and Soup so if I decide I’m just too tired to cook we can eat from those large pots all week.  Not a creative mix if we do that but I know we’ll be getting real food made with ingredients I know and trust, not fast food.

Also this week I’m really excited to be sharing on Thursday Go Ahead Honey, It’s Gluten Free.  This is an event as I mentioned before that was started by Naomi Devlin from Straight To Bed, Cake Free and Dried.  There is always a theme and this one is Scared Silly.  These are foods people were either scared to eat or cook but once they tried, realized it was silly to be scared.  Sometimes these recipes even become family favorites.

Now just to give you a tease there are green things, brown things, red things, purple things, yellow things and some that have all of those colors.  There’s even chicken feet!  OK I’m scared and I think I might eat all of these recipes, well some I think I’m still scared of.  Either way don’t miss these recipes being shared on Thursday!

Don’t forget that this week’s secret ingredient for Friday Foodie Fix is Pepitas!  I can’t wait to hear the creative ways you use these in recipes.

This week’s menu:

Monday- Crockpot 3, 2, 1 Chili

Tuesday- Chicken and Roasted Green Chiles Soup

Wednesday- Spaghetti Squash and Homemade Sweet Italian Sausage

Thursday- Chicken Meatballs and Roasted Brussels Sprouts and Bacon

Friday- Leftovers from this week!

Saturday- Mexican Seafood Soup

Sunday- Spicy Potato Skin Nachos

    Your Chicken Meatballs and Roasted Brussels Sprouts and Bacon sounds fab! I keep seeing interesting brussels sprout recipes, but yours definitely caught my attention. I'll eat anything with bacon. Thanks for sharing!

    Get yourself a good Stanley Thermos and bring a batch of soup with you to the soccer games. Nurse yourself back to wellness even while on the go. You're so smart to plan ahead. That's where we fall off the wagon — when we don't take the time to pre-make some nourishing food. Soup all week sounds perfect!

    Can't wait to see the GAHIGF list. Chicken feet? Sounds like a nourishing broth that might serve you well right now. =)

      Thanks Melissa. I watched the game from the car today. It was great and I still feel better. I usually start to feel good and then sit out at a game and by night I'm done again. It's going to be a long week so being very strategic. Thanks for the thermos idea!

    Hope all those soups will knock the rest of that illness right out of you! The whole week sounds like some phenomenal food, but do take care of yourself, dear. Healing hugs to you!

      Shirley- thanks for the good wishes. I am starting to gain ground and feel a little better 2 days in a row. That's a new record. I'll be finishing up my post tomorrow so I hope everyone has sent in their GAHIGF posts. It's going to be great food, and a self indulgent story. I bet you'll guess but don't say anything.

    Wow, so many people are sick right now! I hope you are back to 100% soon. This sounds like a good "warm" and comforting menu.

    As soon as our CSA ends, I want to start doing these weekly menus!

      I guess it's that time of the year. My soup is really making me feel better. You know you can make a menu plan even with a CSA. It's more of an outline but it works great. Start now!
