Ham with Peas and Potatoes Au Gratin Recipes

Who doesn’t love a creamy dairy free potatoes au gratin with a little ham that is gluten free and peas to top it off!  I’m a little late in sharing this but it’s never too late to add this to your menu.

This is another quick and easy meal if you have a few kitchen tools.  You know what they say, having the right tools is half the battle.   You’ll need a way to slice the potatoes so they are thin and the same thickness.  You have some options.  You could use a knife but I find it really hard to get them all the same thickness.  I use my food processor.  You could also use a Mandolin or V slicer.

For this recipe I had bought these peas fresh from the farmers market but you can use frozen peas too.  Please do not use peas from a can.  They are too mushy.  If  you don’t like Ham you can substitute chicken, pork, turkey and even a nice piece of fried fish would work.

Ingredients:

3-4 medium potatoes, peeled and sliced thin

2 TB Butter – I use Earth Balance Buttery Spread, gf, df, soy free

1 cup Cheese- I use cheddar and mozzarella Daiya gf, df, sf

Celtic Sea Salt

Fresh ground cracked pepper

1/2 cup milk- I use almond milk

parsley for garnish

I Ham Steak cubed

1 cup fresh peas

Directions:

Fix your potatoes first and get them into the oven.  They take approximately 40 minutes to cook. The ham and peas are fast.

Preheat your oven to 400 degrees and prep the ingredients.

Rub the bottom of your casserole dish with the butter so the potatoes don’t stick.  Add a layer of potatoes with a sprinkle of salt and pepper.  I like to overlap the potatoes just slightly and follow the edges of the pan no matter what the shape.  If using a round dish make rings until the bottom is covered.  Sprinkle with 1/4 of the cheese and 1/3 of the butter in little pats.

Repeat this until you end up with a top layer of potatoes.  Pour the milk on top, cover with foil and put into the oven to bake for 20 minutes.  At that point uncover the dish and add the remaining cheese on top and bake another 20 minutes.  Remove from oven and let sit for 5 minutes.  Sprinkle with parsley before serving.

While the potatoes are cooking you have your pick.  Sort through the day mail, email, talk with the kids, walk the dog, sit and enjoy a glass of wine, chat with your spouse or anything else you fill your time with.  I like catching up with everyone but often it’s paired with walking the dog.

When the potatoes are cooling for that 5 minutes, add the ham to a pre-heated pan and warm through while it caramelizes on the edges. Toss in your peas and cook a little longer.  If you are using frozen peas allow a little longer cooking time.
