Alisa- I actually got a grinder attachment to my Kitchen Aid this Christmas. Can't wait to use it. In the past I've just asked the butcher to grind it for me. I shop at the same few stores and always talk with the folks behind the counter. We know each other now. They always look out for me. I try to get organic pork and ask with a smile. So far it's not been a problem. Now I'm going to grind it myself so I can play with texture.

This sounds great. I've never made chorizo but I love all the Mexican spices. I may have to give this a try. Thanks for sharing.

Awesome recipe Diane! Do you grind your own pork? If so is there a grinder you recommend? Ground pork is so expensive and hard to find around here, and we were wondering about getting a meat grinder.

Linda- Thank you! I was really surprised at how easy it was. It sounded so hard to make my own sausage. It's really a lot of fun. Can't wait to try more flavors and types of sausage!

Lynn- Wow, is it a lot of work to raise hogs? I would say you probably have a lot of really fresh pork around. Let me know how you like the chorizo. Check back for the andoullie recipe soon!

That's great Diane. Homemade is always better, though I've never made sausage. You inspire me!

Thank you for this recipe. I can't wait to try it. I have tons of ground pork because we raise hogs. And my husband loves chorizo, but it is usually too spicy for the kids. I like this because you could adjust the seasoning and make it less spicy. Thanks!

Linda- I'm with you on avoiding the nitrates and preservatives. I tell you there's nothing like making fresh sausage. Make the whole batch and freeze the rest in portions so you'll have it whenever you fancy. Thanks for stopping by!

This is fantastic! I have to avoid nitrates and other preservatives, so I've always wanted to try and make my own sausage, plus chorizo is one of my faves! I know my hubby is going to want to try this one really soon!

I am so excited about this recipe! I love Mexican chorizo, and this way, you can control how much fat goes into it. Most of the "cheap" brands are fatty (and they have wheat or barley in them). The fresh-made ones like what you can find at Whole Foods are good, but that requires a special trip! I could make up a bunch of this and freeze until needed. I love making breakfast tacos with chorizo.
