This week’s Secret Ingredient for Friday Foodie Fix is Almonds!  Its no coincidence that is our ingredient with today being the last day to enter to win Elana Amsterdam’s Gluten Free Almond Flour Cookbook.  To enter you must go to the original post, Cookbook Giveaway and Newsletter Announcement at The W.H.O.L.E. Almonds are packed with all the good stuff.  It’s rich in Vitamin E, fiber and monounsaturated fat.  That’s one of the two “good” fats that helps lower your LDL cholesterol (the one you want lower).  Almonds are also shown to raise your HDL cholesterol levels, the one you want raised.

Did you know that almonds are not a true nut but a seed.  I don’t care what you call it, I think it’s wonderful.  I love to add them to my Cranberry Chocolate Nut Truffles, Just 4 Nuts Butter, and my Amazing Toasted Nuts.  I now love to bake with almond flour, recipes I’ve found on Elana’s Pantry and in her cookbook, Gluten Free Almond Flour Cookbook.  I’ve made her Twinkies and Orange Starbucks Cake, and spent one day baking 5 recipes from her cookbook.   I have learned it is key to purchase the correct almond flour.  Unfortunately buying Bobs Red Mill Almond Flour will not yield you the same results.  Elana offers a good list of possibilities that often cost less when purchasing online.    Make sure you are Storing Gluten Free Flours in your refrigerator or freezer.

I hope to see quick and easy recipes for fast dinners in your newsletter. Actually, GF crockpot main dishes with veggies and meats would be super. I’m always looking for new ideas on how to incorporate more veggies…both raw and cooked in our diet.

Love the FFF. :-) Looks like there are some great recipes here once again! I’ve really loved using my almond flour. I was excited to actually pick an almond when I was at the POM Wonderful blogger harvest festival (the POM folks also own almond trees and process almonds). They did tell us they were a seed. We were all surprised.

Shirley- Thank you for sharing lots of great recipes this week. I have to admit that we make those 3 minute chocolate cakes way too often around here. I’ve not made it with the almond flour. Guess I better get right on that. :-)

Had to add another one, Diane. A variation of Nigella’s Clementine Cake. Of course, I just realized that it’s also another chocolate recipe. LOL Dare I add another chocolate recipe? ;-)
