Barb- The things we attempt for our kids and our sanity. Let me know how the baking goes. I know what you mean by forced into it. If you want food free of the ingredients and preservatives you often have to make it yourself. I'm really enjoying Elana's Pantry and her new cookbook Gluten Free Almond Flour Cookbook. Short list of ingredients and easy to make. My type of baking. Also, Amy at Simply Sugar and Gluten Free just created a great down-loadable cookbook that many folks added recipes to. It's for kids and the proceeds go to St. Jude's Hospital. Can't wait to hear back from you on your Thanksgiving baking. I hope you have fun too!

Thank you Diane for your kind comments! This whole baking thing is not really my forte either! Kind of something I'm trying to enjoy as I was somewhat forced into it! I must admit when something goes wrong with my latest experiment my husband is the first to hit the floor laughing. As he so kindly says "I don't think you passed Home Ec....why are you baking?".

Barb- I'm far from a baking expert so I couldn't even begin to figure out what went wrong. The only thing I can think of is sometimes the butter substitutes have more liquid in them than real butter. All we can do is give them a try. You can check out gluten free easily, Karina's Kitchen and The Whole Life Nutrition Kitchen for more gluten free baking tips. Those guys are great and they could probably help you more in the baking department. I'm still getting used to measuring. :-)

Shirley- I'm so lucky that people shared such great information. Can you believe I still have a few more to go! When I get baking this week, I'll be sure to fluff!

I tried the Earth Balance Buttery Spread in a cookie recipe and the cookies tasted burned and haven't tried it since. What did I do wrong? Maybe my assumption that the Earth Balance didn't work was incorrect. Anyone have any experience?
