Barb- what a great way to get those veggies in. I still have to hide them around here. I love the idea of making something completely new with leftovers. Great job!

I love Sweet potatoes! When my daughter was younger I would puree them and put them in everything from spaghetti sauce to casseroles. Now that she is older and I don't have to hide them I put them everywhere! Tonight for dinner we had my favorite dinner for chicken or turkey leftovers. It's sort of like a Shepard's pie with leftovers. I put mashed sweet potatoes or sometimes yams on the top. Yummy!!

Linda- Ah, that means I've picked the right ingredient. Everyone is grabbing up those amazing cranberries. I can't wait to see what you do with them!

Iris- So cool. I'm really interested in the cashew cream too. I hear that is a great substitute for cream cheese. I'm headed to your blog to check it out!

Jenn- Oh you said one of my favorite words, chipotle. I think you're right and that would go well. My vegetarian son will love this. Thank you.

Linda- I got nasty looks when I served the Alexia. I thought they weren't bad but they were a no go too. I think I'm going to try Jenn's potato chips and some of these other great recipes.

Jenn- Wow those look so good. I think I'll give those a try tonight instead of the regular potatoes I was going to make. Hmmm, which seasoning should I use? I do love spicy.

When I linked up the other day I forgot to look at what next week's ingredient is. So I just came back to check, and guess what? I bought a big package of cranberries on Friday. I didn't know what I was going to do with them, but just felt like using them. Perfect timing!

This week's recipe was inspired by the raw pumpkin cheese pie I made last week. I used the pie filling as the base for whipped sweet potatoes with cashew cream. I love all the other ideas here!

The first way I tried sweet potatoes that I actually liked was this:
Dice equal parts white potato and orange sweet potato. Generously oil a frying pan and fry them until cooked through. They will brown so you have to keep an eye on them. Season with salt and rosemary to taste. Yum!

I am linking to a recipe for "Paradise Casserole" that originated from the Candle Cafe in NYC. It has three layers of millet, black beans, and mashed sweet potatoes. It sounds strange but works very well! I served it with a gravy, but I think it would be great with a chipotle type sauce as well! This Friday Foodie Fix is fun :)

My husband doesn't like them either, but he does like Alexia sweet potato fries. I linked to an old, not very original post, but I hope to have another one to add next week.
