This week’s Secret Ingredient for Friday Foodie Fix is Onions! As you can tell by looking at my Ingredients listing, onions is the largest word which means it’s in a lot of my recipes. It’s a go to ingredient which I go to way too much. There are so many great onions. I love the spring onions, leeks, green onions, shallots, red onions, Spanish onions, sweet onions, white onions and more. There are over 300 varieties of onions but most are sold by types instead of names. I just listed a combination of both names and types.
When buying an onion it should feel firm and should smell mild unpeeled. Store them in a cool, dry and well-ventilated place that is also dark. Also, don’t store them near potatoes. Potatoes give off gas and moisture and will make onions spoil more rapidly. Oh, now you get the problem in your refrigerator drawer.
