This weeks Friday Foodie Fix Secret Ingredient is Swiss Chard.  In spite of it’s name it originated in the Mediterranean.  A Swiss botanist named it and that’s how “Swiss” became it’s common name.   I really like the rainbow chard which  has the alternating red, yellow and white stalks with green leaves.   Swiss chard is rich in folate, vitamins A, K and C, magnesium, potassium, iron and fiber.  To be noted, it also contains oxalates, natural substances which if consumed in excess can concentrate in one’s bodily fluids giving the kidney and gallbladder problems.   I wonder, is this really a problem, over eating your greens.  Not in this house.  I’m trying to hide them just to get people to eat them.  But just in case in your house you just can’t stop eating Swiss chard.
