Cucumber and Onion Salad

This is one of the most refreshing salads that is quick to make and fun to eat and is a common salad on my mother’s table.  I didn’t eat it growing up but love it now.  For this salad, I find it easiest to use a slicer for the cucumbers.  There are many mandoline slicers available on Amazon and other kitchen supply stores in an assortment of price ranges.  This is a handy tool to have in your kitchen.  Many have blades to julienne and to cut potatoes into thick  french fries.

These cucumbers and sweet spring onions are from my first week of my CSA (community supported agriculture) from Potomac Farms.  This is my first year purchasing a regular share of a CSA.  We are getting lots of delicious vegetables.  I have not participated in a CSA before this year because I was afraid we wouldn’t be able to keep up with eating that many vegetables or there would be ones I wouldn’t like.  This year I decided it was time to give it a try and maybe I’d learn about some new vegetables.  So if you are wondering how much you get in a weekly share below are pictures of what a regular share from Potomac Farms is like.  In addition I get a dozen farm fresh eggs.  Nothing compares to these gems.  Potomac Farms also offers a robust share (more) or a mini share (less).

Ingredients:

3 cucumbers

2 medium sweet onions

champagne vinegar or your favorite light color vinegar  (I don’t measure this, just coat the cucumbers.)

extra virgin olive oil (I don’t measure this either but about the same as above.)

salt & pepper to taste

Directions:

Slice up the vegetables, toss into a plastic zip bag, add in oil and vinegar, salt and pepper and shake.  This will help seperate the cucumber slices.  Serve in a bowl and enjoy!
