Another quick fix meal for breakfast, lunch, dinner or snack time that is gluten free and dairy free. The key is to have already made the corn tortillas, refried beans and salsa. You could of course use some purchased from the store.
The only other ingredient used was 2 scrambled eggs, 1 per tortilla. Warm your tortilla and heat the refried beans. I like to layer in the homemade tortilla, the refried beans, eggs then salsa. This time I used tomatillo salsa. To change this up you can use black refried beans, tomato salsa, add in bacon, pork, chicken, fish or beef. The point is to use what you have on hand and make it quick and easy.
