Seasoned Fingerling Potatoes

I love potatoes.  If I could, I would live on potatoes and chocolate, but not necessarily together.    Although, I have had chocolate dipped potato chips and they were very tasty.  Back to our fingerling potatoes.  These potatoes are a great side dish to fix when you want something that does not take a long time to make.  The potatoes are small and cook up fast.  You don’t need to peel them, just wash well.  When you drain your potatoes use the pot to finish the dish off.

Remember to change up the seasoning mix according to your own tastes, or what you are serving these with.  The possibilities are endless.

Ingredients:

1 bag of fingerling potatoes
1 tsp organic coconut oil
1 tsp extra virgin olive oil
1 tsp toasted onion flakes
1 tsp Hungarian paprika
1 tsp parsley
Celtic Sea Salt and Corse Ground Pepper to taste

Directions:

Fill your pot and boil the potatoes until cooked (fork pierces potato).  This could take anywhere from 10-20 minutes.  As the potatoes are draining in a colander, add the remaining ingredients to the pan you just cooked them in.  Once the potatoes dry off a little and the oils have heated up add them to the pan and toss.  You just need to coat the potatoes.  Now they are ready to serve.  Enjoy.

Ali- I’m glad you like the looks. I love foods that adapt easily to different seasoning blends. I use these as staples in my cooking but try to stick to my 4 day rotation of foods. It’s hard with potatoes for me. Must be my Irish upbringing. Thank you for your comments!

The ultimate comfort food. I am such a fan of fingerling potatoes. Thankfully, I don’t get them often … I would just eat them until they were gone.
I made some fabulous oven fries the other day. Will share soon. ;-) Sticking with just veggies and not potatoes the next several days.
