Pan Fried Bacon Wrapped Avocados

Yes, you read that right.  I wrapped bacon around slices of avocado and fried them up in a pan.  They were soooo good.  It really was very easy to make and one avocado and a small package of bacon fed the two of us.  We ate some plain and then we took some and put them into a corn tortilla with lettuce and salsa.  A bacon avocado soft taco.  Oh, it was so fun.  I’m starting to drool just typing about it.  I may have to get busy on this one again.  I’m definitely rolling this one out when our friends come over.  You can take these little jems and attach them to a toothpick or skewer and arrange a fancy appetizer or hors d’ oeuvre.

Ingredients:

Organic uncured bacon
Haas avocado
Toothpicks

Directions:

Cut your avocado into wedge shaped slices.  I got 8 slices from one avocado. For directions on how to select and cut avocados, please see Friday Foodie Fix- Avocado.

Next take a slice of bacon and wrap it around the avocado in a spiral direction.  Take a toothpick and enter the avocado through the bacon on one end and out the other.  If your slice is too long then you may need to do this on each end.

Place into a pre-heated skillet on medium high.  Turn on all sides as each side of the bacon crisps.  Once all of the sides are cooked, remove from pan and serve.

Give a little sprinkle of chili pepper or cayenne pepper and a tiny squeeze of lime.  You can also sprinkle Sea Salt on top.  Enjoy!

    I agree with Carrie. You are a very bad influence. Those look incredible. I just finished my recipe w/ avocado. Very green.:)

    oh my… what are you doing to me? And here I'm supposed to start a smoothie cleanse this weekend and you have me drooling over bacon… i love bacon.. and avocados!! I bet that was delish!!

    I will eventually make this one for sure. But, no bacon in the house right now–thank goodness! LOL I am still recovering from all the good food at our support group meeting on Friday. This week promises to be just as challenging with a girlfriends' dinner here Tuesday and a guest arriving on Thursday … Sigh.

    Shirley- with guests coming time to go buy bacon. Everyone loves bacon, unless they are a vegetarian like my son, he just misses it. I think I'll make this for breakfast this week.
