California Cobb Salad Burger!

Yep, a burger!   Why not?  I love everything that goes into the salad, why not turn it into a burger.  For some folks, especially the ones at my house, burgers are more fun to eat than a salad.  So take all of the ingredients and turn it into a burger.  Wrap the burger in a big romaine lettuce leaf and top it off with avocado, tomato and bacon.  I forgot to grab a tomato at the grocery store so I used some salsa and I had romaine hearts, which was not as big a leaf as I would have preferred.  Whatever way you do it, have fun.    I have to say that this was so delicious, messy to eat, but delicious.  Fast, low cost, gluten free and dairy free meals are my favorite!   This meal took me less than 30 minutes from the time I pulled everything out of the refrigerator until I was sitting down eating.

You know that great sounding Avocado Mayo that Ali from Whole Life Nutrition shared with us on Friday Foodie Fix-Avocado, would be great on these burgers too.

So, what other fun salads are we going to turn into burgers keeping them gluten free and dairy free.  If you are free to eat both of those well you can add a lot more salad to burgers onto your list.   What would be on your list?

Ingredients:

1 pound organic ground turkey or chicken breast
½ pound organic ground pork
1 organic egg beaten
¼  red onion diced
½ -1 tsp minced garlic
1-2 tsp Boquet Garni – savory, rosemary, thyme, oregano, basil, dill weed, marjoram, sage, and tarragon
1 tsp paprika
1 tsp Course Sea Salt
½ tsp Cracked black pepper
Haas Avocado slices
Tomato slices or salsa
Romaine lettuce leaves
Cooked Uncured Organic Bacon Slices
Organic virgin coconut oil OVCO

Directions:

Mix the ground meats, diced onion, egg, and seasonings together.  Form into patties and place into a preheated pan with oil.  I have taken a liking to the mini burgers so I used the medium scoop again, approximately 2 TBS.  Cook until starting to brown and turn over.  Cook through.  Press on patties to see if they are firm and done.

Serve on lettuce leaf topped with tomato, avocado and bacon.  Or add that Avocado Mayo!

I’m usually happy with just some cheddar on my burger, but this is making my mouth water. Thanks for sharing!

Sounds delicious, especially with the seasonings, and bacon makes just about anything taste good!

So fresh and gorgeous, Diane. Love all the ingredients and seasonings, too.
I see you are still on a bacon roll. ;-) I am still thinking about your bacon-wrapped avocado bites! Two avocados are on the counter and I have to go pick up bacon, OJ, etc. for our house guest who is arriving tomorrow. :-)

Jessie- I do love bacon and avocado together. Grab some avocados now!
Shirley- Let me know if you wrap up those avocados with bacon for your guests. I’ve been going a little hog wild on the bacon. I’ll try to behave. I have such a hard time. The seasoning were my keep on hand from Penzeys. They have a few combos that are really great and help make meals in minutes. Enjoy your company!
