Spring Break is over for our family but I hope it’s just starting for yours. We had a wonderful trip to Laguna Beach and now it’s back to reality. I sure miss the warm sun and surf. I’m glad this is a seafood week and I think most should be.
Monday –Swicy Shrimp (sweet & spicy) with mango, papaya, and corn
Tuesday –Pork enchiladas with tomatillo salsa, rice and beans
Wednesday –Cobb Salad – bacon, chicken, avocado, egg, red onion
Thursday –Mahi Mahi crusted with macadamia nuts, pineapple and zucchini
Friday –B&B Chili with buffalo and beef
Saturday –Potluck dinner at friends
Sunday –Blackened Tilapia with rice and vegetables
