Yes you read that right. I coated chicken nuggets with Fritos and fried them to a crispy crunchy taste treat in your mouth. This was inspired by my teenager who loves chicken nuggets but doesn’t eat gluten or eggs. I’ve made this before but I mixed the Fritos with gluten free pretzels. He tells me those were better. However, my husband said “these are probably the best chicken nuggets you’ve ever made”. Of course Fritos are one of his favorite snacks.
Boneless, Skinless Organic Chicken Breasts
Tapioca Flour (can use other gluten free flours but make sure it’s starchy like Potato flour or you can use Corn Starch)
Coconut milk (if you want you can use egg but this works the best)
Virgin Coconut Oil
Salt and pepper to taste
You probably noticed I didn’t put amounts. It really depends on how much chicken you make. Start with a cup of flour, half a can of milk and half a bag of Fritos for 2 breasts. Add more as you go if needed.
First you need to pulverize your Fritos. If you do this by hand it’s particularly useful if you’ve had a crazy day. You can also use a food processor.
Take 3 containers, one for each ingredient needed for the 3 step coating process. Also heat your pan on Medium.
In the first container put your tapioca flour. You can add salt (very little) and pepper. In the second container put your coconut milk and the third container will be for the Fritos. Don’t worry your chicken will not taste like coconuts. My extremely picky teen didn’t even notice or my husband.
Cut your chicken into chunks. Toss the chicken in the flour, then the milk, then coat with Fritos. Put into pan and cook until lightly brown. Turnover and cook on other side. You know when they are done by pushing on them. They should not be real soft but a little firm. When you pull them out you can salt them but I wouldn’t recommend it. Fritos has all the salt you need. Learn from my mistake. I’m still chugging water.
Keeping dinner in the same color pallet tonight, we had French fries. A salad would have been a good addition but I made a double batch of chicken which took a long time and I never got to that salad. Oh well. We’ll work on that balanced dinner tomorrow.
