All hands on deck, the cooking has begun! Everyone is helping out and has their jobs to do. Today my oldest son Andy will make gluten free lasagna, I’m cooking everything else for our trip and my husband’s job will be eating it. Last night my youngest son Brad baked Peanut Butter Cookies from The Gluten Free Vegan cookbook by Susan O’Brien. They are amazing! I have not had a cookie in so long and these were worth the wait. Brad used agave so these cookies are also sugar-free, and they’re soy free if you eat the ones with no chocolate chips. The house smelled so good last night and even this morning when I awoke. I hurried downstairs to get another taste, (what, they make a great breakfast) only to find 5 cookies on the cooling rack. At first I thought the boys were up late eating all the cookies. Then I realized my wise son Brad had hidden the rest so we wouldn’t devour them before our trip. Good thinking!
I am very thankful we have a great cookie for Thanksgiving and that my son baked them. He’s a great baker so I’m sure I will be adding his recipes to our list soon. Now, to get that lasagna cooking son started and those pies I promised to bake.
