I can’t believe I actually got my husband to eat Spaghetti Squash but he ate it and asked for seconds! All thanks to Karina the Gluten-Free Goddess. She has wonderful recipes that are all gluten free.
I started with her Spaghetti Squash New Mexican recipe and changed it up a little for his tastes. I had to cut out the tomatoes but added almost a pound of ground beef and a cup of stock. I also mixed in 1 tsp Epazote. It’s a great Mexican spice that helps with the digestion of beans if you know what I mean. I cooked mine on top of the stove in a skillet but Karina gives you more options.
I can’t wait to make this again. Thank you Karina for the inspiration and for helping me find a way to get my husband to eat spaghetti squash.
